Birria was the belle of 2020’s ball of doom. In the midst of endless bad news, watching Instagram and TikTok videos of that consomé drip made us feel like there was still something beautiful in the world. Something fresh and exciting that even a pandemic could not take from us.
Birria stew (from the Mexican state of Jalisco) is in no way a new thing. But Birria tacos, which gained popularity in Tijuana, have slowly been spreading all over the US, and in 2020 the hype peaked in Colorado.
It’s 2021 but I’m not ready to let Birria go out of style. I’m still about it. If you’re with me, here’s where you need to go for the best of Birria in Colorado Springs.
Best Birria Tacos
Tlaquepaque VS Las Americas. This was a tie and a greatly discussed topic on foodie Facebook. Some are Team Las Americas. Others, Team Tlaquepaque. I urge you to judge for yourself. They both feature the classic crunchy and meaty goodness with the consomé for dipping and can be ordered with or without queso grilled inside.
Best Fusion Birria
Slow Downz Texas Creole. Birria Grilled Cheese. That's all you need to know. Perfectly cooked meat melted with cheese between thick Texas toast. Dipped in consomé like an upgraded french dip. This is a fresh and original take on Birria and you need to get your butt down to Coati Uprise and try one for yourself.
Craziest Birria
Maria Taco Shop. Not for the faint of heart. Maria’s makes a Birria Quesapizza that feeds 8 people. It is more of a multilayered giant quesadilla than a true pizza but it is unbelievably indulgent. Perfect for a party. Highly recommend calling ahead as they sell out fast. And yes, it comes with TONS of consomé! For those not ready for this ish, Maria's also makes Birra tacos, quesadillas, and egg rolls.
Bougiest Birria
Ambli. Sometimes you want a fancy cocktail with your tacos and that's a beautiful thing. Just cause it’s classy, doesn’t mean it ain't legit. Ambli’s Happy Hour Birria tacos are small but mighty. I could eat 6 of them. Myself. Easily. Non-issue. They are crunchy little bites of heaven and the flavor is perfection. Check them out at Happy Hour from 4-6 pm.
